- 6 slices of cheese (optional; Cheddar, Swiss, or American work well)
- 6 turkey slices or bacon strips (optional; can substitute with vegetarian options like tomato or mushrooms)
- 1 cup fresh spinach or other greens
- Olive oil or cooking spray (for greasing)
Instructions
Step 1: Preparing the Eggs
- Preheat oven to 350°F (175°C).
- Grease a muffin tin with olive oil or cooking spray.
- Crack one egg into each muffin cup, sprinkle with salt and pepper, and bake for 12-15 minutes until the yolks are set but still slightly soft. Remove and let cool.
Step 2: Assembling the Sandwiches
- Slice the English muffins and toast them lightly.
- Place a slice of cheese on the bottom half of each muffin.
- Add one baked egg, a slice of turkey or bacon, and a handful of spinach. Top with the other half of the muffin.
Step 3: Wrapping and Storing
- Wrap each sandwich in foil or parchment paper and place them in an airtight container or zip-top bag.
- Store in the refrigerator for up to 5 days or in the freezer for up to 1 month.
