  • 6 turkey slices or bacon strips (optional; can substitute with vegetarian options like tomato or mushrooms)
  • 1 cup fresh spinach or other greens
  • Olive oil or cooking spray (for greasing)

Instructions

Step 1: Preparing the Eggs

  1. Preheat oven to 350°F (175°C).
  2. Grease a muffin tin with olive oil or cooking spray.
  3. Crack one egg into each muffin cup, sprinkle with salt and pepper, and bake for 12-15 minutes until the yolks are set but still slightly soft. Remove and let cool.

Step 2: Assembling the Sandwiches

  1. Slice the English muffins and toast them lightly.
  2. Place a slice of cheese on the bottom half of each muffin.
  3. Add one baked egg, a slice of turkey or bacon, and a handful of spinach. Top with the other half of the muffin.
